POV: You are eight years old and searching for a snack to eat after school in the fridge or freezer. Pizza bites are the obvious choice. You could easily nuke these tiny baby calzones in the microwave, without adult supervision. And you could eat 15 of them at once while doing your homework or watching Boy Meets World. The roof of your lips still numbs from the lava cheese that you did not let cool. But it was worth it.

Each bite is packed with healthy ingredients such as carrots, grass fed ricotta and sweet potatoes, plus basil and cauliflower. If you are gluten-free, the cassava is a starchy vegetable that you can use to make the dough. It’s no secret that I love gluten. So it is a big deal that I ate the bites with joy and never once thought, “Well this is pretty good considering it’s gluten-free.”
Snow Days, like pizza bites from our collective childhood, are simple to prepare and require no preparation. It’s okay to microwave them but it is recommended that you use an oven, toaster or air fryer to cook them for around ten minutes. You’ll get golden, crunchy bites on the outside and melty, tomatoes-y goodness inside. You can eat them alone or with a marinara or dressing. I love Trader Joe’s vegan creamy dill salad with buffalo chicken. This is a great compromise for those who don’t want to spend time planning meals and preparing ingredients, but also want to save money on delivery and takeout.
These are delicious and satisfying. I have been eating them for lunch several times a week. These aren’t the kind of snacks I’d choose to munch while watching So Weird reruns, but they would be perfect for a ’90s Netflix queue.
